Why does text copied from a PDF have line breaks everywhere?
PDFs store text line by line as it was laid out on the page, so every visual line ends in a hard break. Pasting it into an email or form keeps those breaks. "Keep paragraphs" joins the lines back up while leaving real paragraph gaps.
What is the difference between the two modes?
"Keep paragraphs" removes single line breaks but keeps blank lines between paragraphs. "Remove all" joins everything into one continuous block.
Does it fix hyphenated words split across lines?
Yes, if "Re-join words hyphenated at line ends" is ticked, "exam-\nple" becomes "example". Untick it if your text has real hyphens at line ends.
